The Power Up Bowl 💪🏼

"The Power Up Bowl" is one of my favorite meals from The Summer Vibes Challenge Meal Plan! It is delicious and refreshing, which is perfect as the summer heat starts to intensify ☀️ The best part, it is super simple to make! With just under 10 ingredients and less than 10 minutes of preparation, it is the perfect mid-morning snack! 

Ingredients:

  • 1 cup unsweetend vanilla coconut milk
  • 1/4 avocado
  • 1 cup frozen blueberries
  • Handful of baby spinach
  • 1 frozen banana
  • 1/2 cup frozen strawberries
  • 1 scoop vanilla protein powder
  • 1tbsp unsweetened coconut shavings
  • 2tbsp granola

Directions:

Mix all but 1/2 cup of frozen blueberries, granola and coconut shavings. Blend together in a blender until smooth. Pour into a bowl. Top with granola, coconut, and 1/2 cup frozen blueberries. Enjoy 😋
